These 15-Minute Garlic Noodles Instantly Became Our New Favorite Side Dish

His recipe is actually a nod to another chef, Helene An, who added this dish to her menu at Thanh Long restaurant in San Francisco in 1978. Her inspiration: A lackluster pasta dish she tried at an Italian restaurant. She found it too bland for her taste, so chef An riffed on the recipe and gave it some of her Vietnamese flair. The result is a quick and easy noodle recipe that includes punchy, umami-rich pantry staples and 20 cloves of garlic. It’s “definitely a dish for garlic lovers,” López-Alt says in his demo video on NYT Cooking’s YouTube page.
